3 cups cooked black beans
3 cups corn kernels
1/2 cup red onion, thinly sliced
1/4 cup finely chopped coriander
1/4 teaspoon garlic powder
1 lime, juiced
1 lemon, juiced
2 large avocados, cubed
In a large bowl, combine black beans, corn kernels, red onion, coriander, garlic powder, lime juice, lemon juice and avocado. Toss gently to combine. Serve chilled.
TIP: You can use red kidney beans or any other beans of your choice in place of black beans.
